Rửa sạch sườn và cắt khúc nhỏ vừa ăn, sau đó thêm 2/3 muỗng cà phê muối, 15ml rượu vào trộn đều, ướp khoảng nửa tiếng rồi cho thêm 1 lòng trắng trứng vào.
Thêm 10g bột bắp vào tô sườn ướp, đảo đều. Đồng thời, cho 100ml dầu vào chảo và làm nóng chảo.
Cách làm sườn rim chua ngọt: Cho sườn vào chiên, đến khi sườn chuyển màu vàng nâu thì vớt ra, để ráo dầu. Chừa lại ít dầu trong chảo, thêm 15ml nước và 1 viên đường phèn vào, đun với lửa nhỏ.
Làm sốt sườn rim chua ngọt: Đun nước đường phèn đến khi tan hết và ngả màu vàng nâu. Cho sườn vào, đun với lửa vừa và đảo nhanh tay để phần nước đường áo đều quanh sườn. Sau đó, thêm 7ml nước tương vào. Cuối cùng cho 7ml giấm vào, đảo đều và nêm nếm sườn rim chua ngọt lại cho vừa ăn.
Khi thấy món ăn đã đủ vị thì rắc lên thịt ít mè, tắt bếp. Cho sườn rim chua ngọt ra đĩa và dùng ngay với cơm nóng cho ngon. Thịt sườn mềm, béo thơm đẫm vị nước sốt chua ngọt đậm đà, ăn siêu hấp dẫn.
