Ngâm xiên que trong nước trước khi nướng khoảng 1 tiếng để xiên giảm độ giòn và không bị cháy khi nướng.
Dứa gọt vỏ, bổ làm 4, bỏ lõi rồi thái miếng nhỏ cỡ bằng con tôm làm được.
Cho nước xốt Teriyaki vào bát lớn, thêm gừng băm, hành lá xắt nhỏ và ớt khô vào khuấy đều. Kế đến bạn cho đường và tỏi băm vào.
Bỏ đầu, đuôi và rút bỏ chỉ lưng tôm. Rồi đặt lên tôm 1 lát dứa nhỏ, sau đó cuộn chặt lại bằng thịt xông khói. Dùng xiên que xiên qua.
Đặt xiên lên vỉ nướng, rồi quét xốt đều lên, nướng ở nhiệt độ 200 độ C trong khoảng 10-12 phút, đến khi bạn thấy tôm chuyển màu và thịt cũng bắt đầu lên màu, chín là được. Trong lúc nướng, bạn nhớ để ý trở sang các mặt khác để thịt được chín đều.
