Hòa tan 70g đường với 100ml nước lọc, bắc lên bếp đun từ 5 - 7 phút, đường sôi to thì vắt nửa quả chanh vào đun đến khi đường chuyển sang màu cánh gián thì tắt bếp. Tráng hỗn hợp đường mỏng vào từng cốc hoặc khuôn đựng.
Tách lấy cả lòng trắng và lòng đỏ, cho thêm 30g đường vào khuấy nhẹ theo một chiều (không đánh bông trứng) đến khi hòa tan hết đường và trứng là được.
Đổ sữa tươi, nước lọc vào nồi, đun sôi nhỏ, rồi cho sữa đặc vào. khuấy đều.
Cho từ từ sữa vào hỗn hợp trứng, đổ từ từ, vừa đổ vừa khuấy nhẹ theo một chiều để trứng và sữa tan đều vào nhau. Khuấy xong lọc qua rây hỗn hợp 1 - 2 lần để hỗn hợp được mịn hoàn toàn.
Múc hỗn hợp trứng sữa vào từng cốc đã tráng lớp caramen, đổ đầy cốc và đậy nắp hộp lại.
Xếp các hộp caramen vào sấp lửng và mang hấp cách thủy từ 30-40 phút. Hấp dưới lửa nhỏ nhất. Cứ 10 phút lại mở nắp xửng ra một lần để nước không bị đọng trên mặt bánh. Có thể sử dụng nồi cơm điện để hấp cũng được.
